Making Chocolate Covered Mint Bites

Ingredients you will need
- 2 1/2 cups powdered sugar
- 2 tablespoons light corn syrup
- 1 1/2 tablespoons water
- 1 teaspoon Peppermint extract
- 1 tablespoon vegetable shortening
- Green candy melts
How to Make
|Step 1 - Mix together in a large bowl 1 cup of powdered sugar, 2 tablespoons of corn syrup, 1 ½ tablespoon of water, 1 dash of peppermint extract, and 1 tablespoon of vegetable shortening.|
|Step 2 - Add 1 ½ cup powdered sugar, 1/2 cup at a time. Mix until doughy, then knead with hands.|
|Step 3 - Divide dough into 1-inch balls, then flatten the dough into 1/2 inch thick discs. place the dough on a plate and chill in the freezer for 5-6 hours.|
|Step 4 - After the dough has chilled, remove it from the freezer and melt the chocolate.|
|Step 5 - Dip the mint bites into the melted chocolate and fully coat.|
|Step 6 - Store in food-safe packaging bags.|
